Banana Chocolate Pancakes (with Warm Blueberry Topping)

These are my 5 ingredient banana chocolate pancakes! No added sugar required as these are just the right amount of sweet with the banana and chocolate.


I love pancakes and this recipe gives just enough for a filling breakfast or lunch or if you want to share would serve two people for an afternoon snack. These are so quick to make you'll have a tasty treat ready in no time.

In this recipe I use chocolate protein powder because I always have some handy in the house. However, these are just as good with cocoa or drinking chocolate, use what you have. The combination of blueberry's and chocolate goes well here. I always keep blueberries in the freezer, so for this is was a simple as popping them in the microwave to heat up to create delicious warm topping.



Recipe


Serves 1 (makes 5 or 6 pancakes depending on size)

  • Half a mashed banana

  • 50 grams self-raising flour

  • 30 grams chocolate powder

  • 1 tsp baking powder

  • 150 ml your choice of milk

Directions

  1. Mash the banana in bowl

  2. Add the dry ingredients to the bowl and mix together

  3. Gradually whisk in the milk until you have a thick-ish batter

  4. Pour into a medium hot frying pan, once you see bubbles start to form flip over. Leave for a further minute or so until cooked through then remove to a cool rack.

Blueberry Topping

  • Add a handful of blueberry's to a small microwavable bowl.

  • Heat in the microwave for approx. 45 seconds.

  • If you need extra sweetness add a little icing sugar or golden syrup to the blueberries and stir through.
